The ice cream can make everyone happy! It is a food suitable for children and brings us back to childhood! Its creamy and velvety texture, its freshness and its sweetness delight us, they give us a wonderful feeling of well-being. There are endless versions of ice cream. I propose you the most “classic” one, that is chocolate ice cream. It’s a delicious version and as you know, dark or milk chocolate are antidepressant for excellence! - 500 ml whole milk
- 200 ml fresh cream
- 6 egg yolks
- 80 grams caster sugar
- 45 grams bitter cocoa powder
- 250 grams milk chocolate with 30% cocoa
- Flakes of almonds, chopped hazelnuts or biscuits to garnish
Chop the chocolate and set aside. Beat the egg yolks with the sugar. The mixture must become white and well blended. Stir in the sifted cocoa and mix well. Meanwhile, bring the milk and the fresh cream to the boil. Once they are hot, pour over the egg mixture. Mix and pour everything into the pot again. Bring the mix to a temperature of 84° Celsius degrees. Remove from the heat, stir in the chocolate and stir until it’s completely melted. Place the pot with the mixture inside a cold bain-marie (it must be created by water and ice). In this way the ice cream base will cool faster. Pour everything into a bowl, cover with cling film to avoid the creation of bubbles or water on the surface. Refrigerate for at least an hour. After you have to use your ice cream machine, following the instructions of your appliance. Pour the mixture into it and stir for about 30 minutes. Store in the freezer for at least 12 hours. Serve.
