This dish is prepared during the autumn. It is one of the most popular Sicilian food. It is very easy to cook, even if you have to spend some time to fry the pumpkin slices. We Sicilians love to add fired and slightly bitter black olives to flavor this delicious dish. This pumpkin is sweet, bitter, salty and a little acid. Serve your white or red meat dishes with this delicious seasonig squash, you will not regret it!
Serves: 6
- 2.2 kg pumpkin
- 80 grams fired and pitted black olives
- Sunflower oil
- 5 tablespoons white wine vinegar
- 2 peeled garlic cloves
- Salt
Method
Peel the pumpkin and cut it into slices, but not too thin. Fry in plenty of hot seed oil and then set aside. Remove at least half of the remaining oil in the pan and fry the garlic for a minute. At this point add the olives cut into pieces, blend with the vinegar and cook for another minute. Add the pumpkin and cook for about three minutes. You can serve the squash cold or lukewarm.
